Grilled, Rotisserie Chicken
Ingredients:
1 whole chicken 4 - 5 pounds
4 teaspoons salt
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon thyme, dried
1 1/2 teaspoons black pepper
1 teaspoon cayenne pepper (optional)
1/2 teaspoon garlic powder
1 small onion, peeled
cooking oil to rub chicken
Directions:
1. In a small bowl, mix together until blended all ingredients except chicken, onion and oil.
2. Remove giblets from chicken, rinse chicken cavity, and pat dry with paper towels.
3. Rub chicken with oil and then inside and out and under the skin with spice mixture.
4. Place the peeled onion into cavity of the chicken.
5. Truss (tie with string/twine as in picture below) the chicken and place it in a large, plastic bag or double wrap with plastic wrap, and refrigerate overnight, or at least 4 to 6 hours.
