Greek Garbanzo Bean Salad
Ingredients:
1 - 15 ounce can garbanzo beans (chickpeas), drained.
2 medium garlic cloves (segments, not whole heads), minced or pressed
1 large tomato, diced (or 1 cup cherry tomatoes, each one cut in half)
1/2 medium red or white onion, peeled and chopped into whatever size pieces you prefer
2 tablespoons parsley, chopped
1/4 cup crumbled feta cheese (parmesan cheese is also good in this recipe, I usually use both)
6 large kalamata (black) olives, sliced
1 tablespoon fresh lemon or lime juice
3 tablespoons extra virgin olive oil
salt and pepper
Directions:
Put beans, garlic, tomato, onion, parsley, cheese and olives in a medium size bowl and mix well.
Toss with lemon or lime juice and olive oil.
Add salt and pepper to taste and serve.
