It's summer here in Southern California, USA and ice cream sure tastes good on a hot day. The recipe below is not only easy, but it allows you to create whatever flavor you can dream up! Be creative and have fun smiley

2 cups heavy whipping cream (1 pint)
1 14oz can of Sweetened Condensed Milk
1 teaspoon Vanilla Extract (for vanilla flavored ice cream)

PLAN AHEAD: Put the cream and the condensed milk in the fridge the night before.


With electric mixer or with a hand held whisk, beat cream till stiff peaks form then carefully fold in condensed milk and vanilla until well blended.

Pour into an airtight container, seal the lid and freeze for 4-6 hours.

Allow to sit at room temperature for 5-10 minutes then scoop into cones or bowls.


Note: You can add ingredients after condensed milk is folded in such as fruit, choc chips, mini Reese's peanut butter cups, cocoa powder, color it with food coloring, add flavor extracts other than vanilla, etc.

Be creative and create an ice cream flavor that's not sold in any store!!

Made up: added 30 drops vanilla and 10 drops banana extract + 50 gram of PURE (nothing added) peanut butter. <br> Seems very sweet, put in the freezer and lets hope i like it. smiley

@PureVodka🍺 How did your ice cream turn out? I have been wanting to add peanut butter but I thought that since peanut butter is so thick, it would break down the whipped cream too much. I also thought about adding it to the condensed milk before folding it into the whipped cream. hmmmm <br> <br> Let us know how it goes! :)

@caseyanne Found it to sweet and it's not soft scoop lol. The peanut butter was a good idea, just add last min in bits and break up with a fork. <br> One thing i will say is how easy it is to make up. <br> Will be trying this again (defo) with sugar free milk and a single cream with about half of the flavoring, will let you know how it turns out, thanks for the recipe. smiley smiley <br> <br> By the way if you have sugar (i don't) in coffee with milk just add some melted ice cream, you will love it. ;)

Got some more ingredients in: <br> <br> 600ml Low fat 15% cream <br> 400 gram Evaporated milk 12% sugar. Yes i made a mistake and did not get " Sweetened " Condensed milk, which means i should add about 200+ gram of sugar (not going to happen lol). <br> Will be adding other stuff like flav drops and?? Will update. smiley <br>

@PureVodka🍺 <br> Here's the thing to remember, though ... when you reduce the fat content, it will form more crystals and be less creamy. Like ... have you ever eaten what they call "light" ice cream here in the U.S.A. or "ice milk"? It's like that. It's ok but just not very rich and creamy. Actually, however, although I have never tried it, I don't see how reducing the sugar content will effect it's texture at all. It's just the "low fat" cream that will effect it. <br> <br> Good luck! And, yes please, keep us posted!

@caseyanne Thanks for the info on the fat, as for ice crystals in ice cream, one of the reasons i gave up on buying from the shops. :)

@PureVodka🍺 <br> Here are my suggestions ... <br> <br> If it's just the sugar you want to lower, stay with the 2 cups heavy whipping cream, then substitute your lower sugar evaporated milk for the sweetened condensed milk, and last but not least, add any flavorings and other additions to the evaporated milk first and then carefully and gently fold the evaporated milk with additions into the whipping cream after it has been whipped to stiff peaks. <br> <br> Actually, I think I will try this myself the next time I make this. I usually make it at least once a month. I am an "ice cream" junkie for sure!

@PureVodka🍺 I just thought of something else ... I'll just bet the commercial ice cream shops you speak of have cut down on the fat content in their ice cream to save on their costs. Which, of course is why it contains more crystals. <br> <br> Those stinkers!! :)

@PureVodka🍺 All Ingredients used: <br> Most of the cream (some ended up on the microwave and stuff), which i used a electric whisk for. Some i well try in a coffee. <br> About 3 oz of crushed walnuts and Cadbury whole nut chocolate. <br> 1/4 ml vanilla flav (10) drops and 1/2 ml of banana flav (20) drops. <br> And some peanut butter. <br> The cream is a slight bitter (well in date), it is low fat. <br> In the freezer will update. :)

@PureVodka🍺 <br> The ice scream had a slight taste of the evaporated milk to it, added more flav drops and was okay. <br> <br> The chocolate and nuts needed crushing more, not happy about that. <br> <br> But what really messed this up.....was all the ice crystals L smileyL yes you warned me, you know your ice cream. smiley <br> <br> Purred down the plug hole, rating 1/5 yep big fail. smiley Next time it will be right. smiley
