Brown Sugar Fries
Ingredients:
3 medium russet potatoes
4 tablespoons oil (olive, canola, veg, peanut, etc.)
1/2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons brown sugar
Directions:
1. Peel and rinse the potatoes and cut them into fries. Try to keep them as uniform in width as possible, otherwise the super thin fries will overcook while super thick fries will undercook.
2. Submerge the cut potatoes into a bowl of warm water (not hot and not cold) and let them soak for 20 minutes. Drain and lay them out on a bed of paper towels and pat them dry thoroughly.
3. Coat a rimmed baking sheet with 3 tablespoons of the oil.
4. Sprinkle half of the salt and pepper on the oil coated baking sheet.
5. In a bowl, coat the now dry potatoes with the remaining 1 tablespoon oil.
6. Lay the potatoes out on the rimmed baking sheet in a single layer and sprinkle on the remaining salt and pepper.
