Aunt Nora's Walnut Cookies


1 egg

1 C brown sugar

1 C walnuts

1 C sifted flour

1 tsp vanilla

1/4 tsp salt

1/4 tsp baking soda


Heat oven to 350 degrees.

This is dryish lumpy mixture...stiff and hard to mix.

When spreadable, spread in 8" square tin or any shape that approx. size (shallow)

Bake 15 to 20 minutes.

While hot, cut -mark off- in squares about 2 x 2. After a few minutes, remove from pan with spatula to cool.

This batter will spread out in pan as it gets hot.

I always make a double batch mixing with my hands.
When mixed I smoosh it down in a casserole dish.
Smoosh it down extra in the middle leaving it a little higher on the edges as to promote even cooking.
I think they should be called Walnut Bars, not Walnut Cookies, but try telling Aunt Nora that.

@PureVodka🍺 Crunch isn't the right word for it. Like I said, they should be called Bars, not Cookies.
They're as crunchy as walnuts. smiley

Swap the flour for almond flour and this would be okay on keto (walnuts are low carb).
Has anyone else made this?

@PureVodka🍺 And replace the sugar with Erythritol brown sugar (which i have) are any other low carb brown sugar.
