IMPORTANT INFORMATION: The combination of lentils and oats in the above recipe provides as complete and nutritious a protein as the protein found in meat, fish and meat by-products, such as dairy and eggs.

<br> Many vegetables contain protein, but when plant-based foods are not eaten in the right combination, they are "incomplete proteins" and do not provide a "complete protein", meaning protein that contains all of the nine Essential Amino Acids necessary for a healthy diet.

VEGGIE LOAF
(Makes one loaf, 6 servings of 1 slice each. Doubles nicely.)
Ingredients:
1-19oz can lentils, drained and mashed (or 2 cups drained home-cooked lentils)
1 small onion, finely diced
1 cup quick-cooking-style rolled oats
3/4 cup grated cheddar cheese or cheese of your choice
1 egg, slightly beaten
1/2 cup to 2/3 cup any tomato based sauce, i.e. spaghetti, bbq, pizza etc or combo of
1/2 teaspoon garlic powder or 1 clove fresh garlic, minced (optional)
1 teaspoon dried basil or 1 Tablespoon chopped fresh basil (or herb of choice)
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
Note: Can also add one small grated (not shredded) carrot and/or 1 teaspoon celery seeds, and whatever other spices and/or herbs you wish. I added cumin one time and that was good. I have also left out the garlic at times when I wanted a blander loaf. I have also added a little italian seasoning blend, and also tried poultry spice blend one time, both were very good. This recipe has become my go-to for the times when I want a "loaf" of some kind, especially for cold sandwiches later, but don't want a meat loaf.

@nonamemanon My next-door neighbors are an elderly couple, ages 85 and 86. They are struggling to stay in their own home and really only need a little help from friends and family to do it. A few of us in the neighborhood do odd jobs and run errands for them to help out, and I try to get a meal over to them a few times during the week. <br> <br> Yesterday, I took them one of these veggie loaves, which they are partial to. They especially like the fact that they can make cold sandwiches later on. They do like their food rather bland, so, for their loaf (I made two, one for them and one for myself), I omitted all spices, herbs, etc. (surprisingly, though, they do like onions in their food), and also, I omitted the salt in theirs as they prefer to sprinkle on their own, which is usually none. <br> <br> They always remark later how much they enjoyed "The Loaf", as they call it, and how tasty it was and invariably one of them will say "And, there's no meat in it?" Like, maybe I just forgot and since the last time I made it for them I remembered that I did indeed put meat in it. ...
