3 1/2 cups water
1 1/4 cups white vinegar
1 tablespoon sea salt
3 - 4 medium sized cucumbers, cut into approx. 3" spears (or cut into 1/4 inch slices)
3 cloves garlic, sliced thin (a clove is one segment of a whole head of garlic)
3 heads fresh dill (usually sold in the produce section in the grocery store)
3 quart-sized glass jars that have been washed and sterilized with boiling water, including lids.
Directions:
Place 1 sliced clove of garlic and 1 head of fresh dill on the bottom of each jar.
Pack the cucumber spears (or slices) tightly in the jars.
Bring to a boil the water, vinegar and sea salt, stirring to dissolve the salt. This is your brine.
Pour the brine over the cucumbers, filling each jar to within 1/2 inch of the top.
If using regular canning jars, place the lids over the jars and screw on the rings until tight. If using other glass jars, tightly screw on the lids.
... 6. Let the jars cool to room temperature and place in the refrigerator for at least 2 days.
The pickles will improve with flavor as they age.
NOTE: Refrigerator pickles will keep for about 1 month. If they develop any off flavors or smells, or if you notice fermentation, it's best to just discard the remaining pickles.
